I spent my evening making some impromptu peanut butter cookies to satisfy my sweet tooth, so I figured I should write about a salad to counteract my gluttony. This isn’t so much a recipe, per se, but more of a list of ingredients I found in my kitchen to make a deliciously healthy lunch. A good kale salad was all the rage a couple of years ago, and still finds its way into my stomach on occasion. Pictured here I mix baby kale with leftover supremed orange segments and quartered strawberries (from my pound cake photo shoot), crumbled feta cheese, and walnuts. The salad gets simply dressed with the fresh juice from the orange, a good quality olive oil, and a sprinkle of sea salt. I kind of surprised myself with how delicious this kale salad turned out, so you should definitely give it a try.

- baby kale
- orange, segments and juice
- quartered strawberries
- crumbled feta cheese
- walnut pieces
- olive oil
- sea salt
