I’m sure you’re like me in that you don’t really feel like making a 5 star meal after hours spent slaving away for “the man” (or woman). Here’s yet another of my after work meals that is simple yet satisfying. And it’s not even that bad for you…if you don’t count the potatoes of course.
Season the chicken with garlic salt, black pepper, and thyme. Heat a skillet with some olive oil and cook until golden, brown, and delicious (and done). In my years of experience, I feel like I’ve almost developed a sixth sense for knowing when the chicken is done. Yet somehow, I can still let my impatience/hunger get the best of me…
Peel the potatoes, dice them into roughly even pieces, and cover with cold water in a pot. Bring to a simmer and cook until fork tender. A neat little trick is to leave the potatoes in the hot pan for a little while after you drain them so that any excess water can evaporate.
Mash with half-n-half, butter, sour cream, and the cheese of your choosing. (You can’t say I didn’t warn you!) Oh, and don’t forget to season with salt and pepper.
Lastly, let us remember to listen to our mother’s voice inside our heads telling us to eat our vegetables – so add something healthy to the plate (corn in this case) to round out the meal.
