Roasting garlic is a super simple way to get some great flavor for you to add to your dishes. The roasting mellows the flavor and brings out the garlic’s sweetness, similar to what happens when you caramelize onions. Roasted garlic is great spread on some crusty bread, mixed in with soups and stews, or used in dips and salad dressings. I used this batch to make roasted garlic mashed potatoes—and they were delicious!
Oven-Roasted Garlic:
Trim the top of the garlic bulb off, exposing the cloves. Place the bulb on a shirt of aluminum foil and drizzle the cut top with about a tablespoon of olive oil. Seal the garlic in the foil and place in a 375˚F oven for about 45 minutes, until the cloves are softened and browned. Feel free to roast as many bulbs of garlic at the same time as you want. Once the garlic is cool enough to handle, just squeeze the bulb from the bottom to get to the garlic cloves.
