A brief synopsis of a conversation I had with a friend a couple of years ago:
Friend: “Hey, who wants to help me drive from D.C. to Houston to move my stuff for med school?”
Me: “ROAD TRIP!”
I’m pretty sure my friend thought she wasn’t actually going to find anyone to go with her. Let’s just say that it doesn’t take a whole lot of convincing for me to jump at the chance to travel and spend time with my friends. A couple of weeks later, I hopped on a bus to meet her in D.C., and from there we began our journey halfway across the country while making a couple of detours to visit friends along the way. It was full of laughter, sing-a-longs, passenger seat napping, pit stops, rain storms, fearing for our lives in rural America, fast food, conversations about life, and an overall great time. In order to provide fuel for the drive, you should always have a great breakfast before hitting the road. Here’s a quick, simple recipe to start any day off right.
Ingredients:
- 1 3/4 cups water
- pinch of salt
- 1 cup quick cooking oats
- 1 ripe banana, sliced
- 2 Tbsps. butter
- 2 Tbsps. sugar
- 1 Tbsp. cocoa powder
- 1/2 tsp. cinnamon
Procedure:
- Bring water and salt to a boil in a saucepan.
- Stir in the oats, reduce to medium heat and cook 1 minute, stirring occasionally.
- Cover, remove from heat, and let sit for 2 to 3 minutes.
- Stir in the banana, butter, sugar, cocoa powder, and cinnamon. Serve.
