Let’s start with the ribs…
Ingredients:
- rack of ribs
- brown sugar
- pepper
- paprika
- seasoned salt
- chili powder
- bbq sauce
- honey
Instructions:
For these ribs I decided to use a dry rub. It consisted of approximately 2 parts brown sugar, and 1 part each of the other seasonings (pepper, seasoned salt, paprika, chili powder). Coat both sides of the ribs with the rub. Place in a baking pan and add a little bit of water to the bottom. Cover the pan with aluminum foil and place in a 275 degree oven for 2 hours. Remove the foil and pour on a layer of your favorite BBQ sauce. Put back in the oven uncovered for 1 hour. Next, drizzle on some honey and baste again with some BBQ sauce. Put back in the oven for another hour or so, and then prepare to eat until you can’t move any more!
(Yes, I let them cook for 4 hours. They don’t need to cook for that much time, but the longer the better.)
Now on to the hoe cakes. Caution: This recipe is still being perfected, but they turned out pretty well for a first try.
Ingredients:
- 2 cups of cornmeal
- 1 cup of milk
- 1 egg
- 1 tablespoon of sugar
- 1 teaspoon of salt
Instructions: These are really easy to make. All you need to do is combine the ingredients and then fry them in a skillet with some vegetable oil like a pancake.
