Black-eyed peas are a soul food staple, especially around New Year’s. Eating black-eyed peas on New Year’s Day is believed to bring luck for the coming year, and after 2018, I think we could all use a little boost to help make 2019 as great as it can be.
This black-eyed peas recipe is flavored with smoked bacon, onion, and other spices. I like to cook the beans down until they are soft, creamy and just barely start to break down, thickening the broth they have been cooking in and giving it some body. For serving, I like to ladle them over cornbread with a spoonful of pickled cucumber relish on top for a bit of acidity and brightness.

Black-Eyed Peas Recipe
This soul food staple is flavored with bacon, onion, and other ingredients and cook until tender and creamy.
Ingredients
- 1 pound dried black-eyed peas
- 4 strips smoked bacon, diced
- ½ onion, diced (about 1 cup)
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 6 cups chicken stock
- 3 bay leaves
- Kosher salt, to taste
Instructions
- Sort and rinse the beans and then soak in a large container with lots of water overnight. (You want them covered by at least 2 or 3 inches.)
- Add the bacon, onion, black pepper, and garlic powder to a large pot over medium heat and cook until the onions have softened and are slightly translucent, about 10 minutes.
- Add the soaked, drained beans, chicken stock, and bay leaves. Bring to a boil, reduce to a simmer, and cook, skimming any impurities that rise to the surface, until the beans tender, about 1 hour.
- Discard the bay leaves and season with salt. Serve.

In the process of making this now…. I have been recently diagnosed with high blood pressure… At 30yrs old… Its been severe so finally I’m trying to put better things in my diet.. So I halved the recipe for my husband and I and it was just perfect. The flavors are excellent. Thank you for this recipes. Oh, also I did not presoak the beans at all. The beans softened up fine and if you want a more creamy broth just stir the beans often, about every 15 minutes.

So I never soak my black eyed peas and they are nice and tender after about an hour of simmering. I flavored with salt and pepper, 4 tbs.butter and a tbs. Of bacon fat some minced onion and some garlic powder. Is there a reason I am missing about soaking my beans?

No, you don’t need to soak any dried beans. However, soaking can help reduce cooking the cooking time as well as flatulence.

It won’t be exactly the same since the canned beans are already cooked, but 1 pound of dried beans equals 3 to 4 cans.

Thanks so much for the recipe. I made these black peas for my New Year’s Day brunch yesterday and they were delicious. I did however doctor the recipe and added a little sugar to make it my own. I also cooked them in a pressure cooking so I didn’t have to soak the beans overnight. I received rave reviews
