Ingredients:
- about 2 or 3 cups of uncooked rice
- 2 boneless, skinless chicken breasts
- 1 bag of frozen broccoli
- 1/2 can of evaporated milk
- butter
- cheddar cheese
- salt
- pepper
Instructions:
- Cook the rice.
- Season the chicken with salt and pepper and saute it in a frying pan.
- Cut the chicken into medium sized chunks.
- Butter whatever dish you are going to put in the oven.
- Combine the milk, cheese, rice, broccoli and chicken.
- Season with a little salt and pepper and add in a few pats of butter
- Top with more of the cheese.
- Bake in a 400 degree oven until the cheese is nice and bubbly (it shouldn’t take very long).
