Do you like bread pudding? I sure do. It’s a delicious, carb-loaded treat that is sure to satisfy your sweet tooth. If you’re going to indulge by having a dessert in the first place, then why not swing for the fences?! This iteration takes advantage of the beautiful combination of cinnamon and raisins—warmth and sweet fruitiness. It just struck me that you could probably achieve a very similar result by using pre-made cinnamon raisin bread, but somehow the recipe below would seem to give a greater sense of accomplishment.
Ingredients:
(Yields 4 servings)
- nonstick cooking spray
- 1 quart bread cubes (challah or potato bread are great for this)
- 1/2 cup raisins
- 2 eggs
- 1 cup milk
- 1/2 cup sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 1 tsp. cinnamon
Procedure:
- Coat baking dish with cooking spray. Place raisins and bread in dish.
- Whisk together eggs, milk, sugar, vanilla, salt, and cinnamon. Pour wet mixture over bread and raisins. Press bread into the wet mixture and let sit for 15 minutes for the bread to become saturated.
- Preheat oven to 350˚F.
- Bake in the oven for 20 to 25 minutes until set and it isn’t visibly wet.
Serve warm with a scoop of vanilla ice cream on top and you’ll be in heaven. Let’s all be honest—a scoop of ice cream makes anything better, no?
