Want a quick, light, and easy meal for a busy weeknight dinner? Look no further than these ground turkey lettuce wraps. Ground turkey is cooked with a flavorful sweet-and-spicy sauce and is the main star for these wraps with lettuce, tender herbs, and fresh veggies. It only requires a little bit of prep and then everyone gets to assemble their own wraps as they please.
Ground turkey is not an item that I usually buy (this is my first recipe on the blog featuring it in about three years), but after using it for these lettuce wraps, I’m not sure why it hasn’t made an appearance in so long. Here it acts as the perfect canvas for a mix of sriracha, soy sauce, and molasses, which is the perfect combo of spice, salt, sugar, and umami. (If you want, feel free to used ground chicken or pork instead of turkey. Also, maple syrup could work in place of the molasses, though it doesn’t have quite as much depth of flavor.)
When it comes to the lettuces, I happened to have a box of Gotham Green’s gourmet lettuce medley leftover from an event. If you can’t find this mix of greens in a store near you, then any type of butterhead lettuce (could be labeled bibb, Boston, or butter) would be my number one choice, followed by romaine. Butterhead lettuce toes the line perfectly between being tender enough to fold without breaking and still having a little bit of crunch, all with a mild flavor.
As for the toppings, I include Persian cucumber cut into sticks, thin slices of red onion, and a selection of tender herb leaves (i.e. mint, basil, parsley, and cilantro). You don’t need to go overboard—what I love about this recipe is its simplicity—but one thing I thought of afterwards that might be a nice addition would be some chopped peanuts.
