This takes all of maybe five minutes of prep time, but yet it tastes the equivalent of sitting in a big comfy chair with a blanket, a good book, and a cup of tea. For all of you out there trying not to end up like Dorothy getting shipped to the land of Oz, try this recipe when you get home to fill your belly and relax.
Ingredients:
- chicken thighs
- Idaho potatoes peeled and cut into large pieces (you could also use another type that you don’t have to peel or chop)
- olive oil
- garlic powder
- herbs de provence
- salt and pepper
Place the chicken and potatoes in a pan large enough so that they are in a single layer. Drizzle with olive oil and add the seasonings. Toss it all together so that everything is coated evenly. Then just place the pan in a 425 degree oven for 45 minutes. I also served it with some lima beans that I added a little butter, salt and pepper to. You could also throw some carrots or other hearty vegetables in with the chicken and potatoes to save that extra step.

I just made this chicken and used Herbs de Provence for the first time and I really think it’s my favorite chicken recipe.
