This is another one of the those “I haven’t gotten groceries in a while” type meals.
Ingredients:
- 2 – 12 oz cans of kidney beans
- 4 hot dogs (I like the beef ones)
- 3 or so large potatoes
- chili powder
- pepper
- seasoned salt
- ketchup
- paprika
- hot sauce
Instructions:
- Peel the potatoes and go to work with a grater.
- Try to squeeze some of the liquid out once you’re done so that you don’t start a fire hazard when you cook them.
- Heat a skillet with some vegetable oil and toss in the potatoes.
- Season with salt, pepper, and a little chili powder, and fry away until they are nice and golden brown.
- While those are cooking, put the beans into a pot.
- Add a lot of chili powder (i.e. 4 or more tablespoons worth), some pepper, paprika, and a little salt.
- Put in a squirt of ketchup and as many dashes of hot sauce as you can handle.
- Once the potatoes are done (or you can just use another skillet), slice up the hot dogs and saute them in the skillet with some oil.
- Combine the meat and the beans, and then serve atop the hash browns.
- Man, I love hash browns…
Note: Feel free to use any other (or no) meat you like, but this is all I had to work with.
