Cauliflower florets are roasted until tender and finished with Parmesan cheese to add extra flavor and some nice crispy bits.
I’m sure I’ve said it many times before, but my favorite way to cook most vegetables is to roast them at high heat until tender and they brown up a little bit. Usually I keep it pretty simple with just olive oil, salt, and pepper. Sometimes I’ll add other spices like crushed red pepper flakes or finish it with a bit of lemon juice, but this time I added some Parmesan cheese and it was *chef’s kiss*.
What I particularly love about adding Parmesan to the equation is the crispy bits of cheese. Parmesan cheese cooked until crisp is also called frico, and, believe it or not, is a whole recipe until itself that people sometimes serve with soups, salads, and other dishes. Here, I’ve combined roasted cauliflower and frico recipes into one.
This recipe is super simple to prepare, but is worthy of becoming part of your regular rotation for years to come. Also, this Parmesan roasted cauliflower is a keto recipe for anyone following that diet.

The possibilities are endless for what to eat with roasted cauliflower. It would be great with roasted chicken thighs—that way you could cook them at the same time in the oven. Or you could toss it with pasta, herbs, and lemon for a simple main course. Some other ideas are to include it in rice and grain bowls, as part of a hearty salad, or even as part of your Thanksgiving spread.

Parmesan Roasted Cauliflower
Cauliflower florets are roasted until tender and finished with Parmesan cheese to add extra flavor and some nice crispy bits.
Ingredients
- 1 head cauliflower, cut into florets
- 2 tablespoons extra-virgin olive oil
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/4 cup (or more) grated Parmesan cheese
Instructions
- Heat the oven to 450˚F.
- Put the cauliflower on a rimmed baking sheet and toss with the olive oil, salt, and pepper to evenly coat. Bake until the cauliflower starts to brown and is tender, about 25 minutes.
- Take the baking sheet out of the oven, sprinkle the cheese evenly over top, and return to the oven to bake until the cheese has melted and gotten crispy in places, about 5 minutes. Take out of the oven and let cool slightly before serving.
Notes
The cauliflower has a yellow tint to it because of the particular variety that I used for these photos.
