Bacon goes great with/in just about everything—eggs, Brussels sprouts, and even cookies. I read earlier today that someone recently opened an all-bacon restaurant. (It’s definitely on my list of restaurants to try.) This meal has some of my other favorite things too. Pasta? Check. Cheese? Check. Wine? You bet! All together the ingredients combine to make a great, delicious, and easy meal ideal for an after work dinner.
Ingredients:
- 3 slices of bacon, diced
- 2 shallots, sliced
- 1 pint grape tomatoes, halved
- salt
- black pepper
- 2 cups white wine
- 2 Tbsps. sherry vinegar
- 1 tsp. dried marjoram (or oregano)
- 1 qt. cooked pasta
- 1/2 cup crumbled feta cheese (plus more for garnish)
Procedure:
- Place bacon in a cold skillet, put over medium flame, and start rendering bacon fat.
- Add shallots and cook until translucent. Add tomatoes. Season (lightly) with salt and pepper. (A good amount of salt is already contributed by the bacon and feta.) Cook for 2-3 minutes.
- Add wine, vinegar, and herbs. Simmer for 3-5 minutes.
- Toss in cooked pasta and then mix with feta cheese.
- Serve.
