In all of my recipe developing, I try my best to do a lot of research beforehand so that I can successfully test and photograph the dish in one fell swoop. Thankfully, I succeed most of the time. Where I usually run into trouble is with anything that I put in the oven and then wait to see how it turns out. With stovetop recipes I’m able to tweak things here and there, making adjustments as I go along. But with baked dishes I’m often robbed of that window to fix any potential mistakes.
Coming up with the recipe for this tater tot, sausage, egg, and cheese breakfast casserole was one of those instances. Thankfully it wasn’t a matter of fixing the flavor, but the visual of my first attempt was a little off. I had spent so much time to get a nice pattern on top with the tater tots, but then, without thinking, I proceeded to top it with cheese, thus covering up my potato masterpiece. So I was “forced” to make it again a week or so later. That time I was able to create the work of art shown here.
To those concerned about food waste, fret not—I happily devoured both outcomes throughout the days that followed. This recipe works amazingly well reheated for breakfast throughout the week. (I may have eaten a slice here and there for dinner, too.)
